| Cooking and degustation The ways of tea drinking in china have been many variations from the Tang dynasty. In general, there're 5 methods to enjoy drinking tea. 1. boiling Put tealeaves into kettle and boil. When water is about to bubbling up, put tealeaf powder into water. When it bubbles up the third time, pour the tea into bowls. It's now ready to serve. 2. dunk-and-stir Boil water, when it bubbles up, pour water into bowls which there is tealeaf powder. Stir tealeaf and water completely till heavy foam appears. In Song dynasty, people call it tea-fighting. Those have heavy foam and the foam disappears slowly will win the game. 3. dry fruit mixing Simply put dry fruit into tea, drink tea together with eating the fruits. 4. flower mixing It's created by Zhu Quan in Ming dynasty. Put plum blossom, sweet-scented osmanthus, or jasmine into hot tea. Mixed with flower fragrance, tea smells wonderful. 5. soaking This is the method we're now still using. Put tealeaves into teapot, and pour in hot water. There are several ways to deal with different kinds of tea. But the most important thing is to avoid losing the flavor and keep the beautiful color of tea. ¡¡ |
